Am I being too anal with this?

This is my second REAL try at keto. The first time I stopped after a week due to palpitations and fear. This time I’m loading up on electrolytes and after the first week, the palpitations are gone. I’m going into my second week and getting the benefits (reduced appetite, mental clarity, increased energy…) so yeah. I’m doing SI (like 1 to 8 p. flour, avocado and chips). Everything I am eating is keto. I’m doing my best to stay within the 20g limit. I’ve gone several times with broccoli (I love that stuff). I’m starting to get bored with the usual foods and have an aversion to many of the “good foods” (I can’t eat tomatoes, onions, mushrooms, cauliflower, celery, spinach, or cabbage). I bought “ketogenic bread”, first 647, which I was convinced by the ingredients and then Extraordinary Bites, same thing. I was going to make cold cut rolls, but almost all of them had sugar in the ingredients (less than 1% of the following). I feel like if it has sugar, wheat, or starch on the label, it will derail everything. What worries me most is that I’m going to binge from the boredom of food and I don’t want to do that. I want to get on with this and I just need to know if I’m being too analytical about it…
