I'm new! I know less than 20g carbs is optimal, but can anyone talk about their experience with 20/50 / 100g or carbs?

I’m a chef interested in nutrition, so every meal I’ve prepared for myself in the last week has generally hit the correct macros; for example, my breakfast was about 60% fat, 30% protein, and 10% carbohydrates. so I’m not overly concerned about my meals being on point, but I hadn’t really considered all the naturally occurring carbs. I’m just curious, how … I’m doing this for 30 days to try it out, and is it going to be beneficial to just keep my fats, moderate my protein, and keep cutting out bread, pasta, rice, sugar, beer, and sweets and not worrying about tracking … Or should I specifically track and really try to keep my carbs under 20g? It seems like everything I follow is over the recommended amount for me! Everything from spinach to avocado to broccoli has carbs! So any tips for a newbie?
