Doing keto caramel and there was TONS of steam (or smoke)?

I made Samoa keto bars tonight and when I was making the caramel for them, when I brought the sweetener and butter to a boil as instructed, it started to give off TONS of steam! I had to boil it for three minutes and it just disappeared the entire time. I think it was steam, I didn’t burn the caramel so I don’t think it was smoke. Anyway, he didn’t know if this was normal or if he had done something wrong. Does this always happen if you boil artificial sweeteners due to the sugar alcohol? I have made other recipes that call for boiling an artificial sweetener with something else (fruit etc) but this has never happened before. There was so much steam / smoke that it set off the fire alarm! Has this happened to someone else?
