The search for thanksgiving for the ketogenic "potatoes." Experiments with Rutabaga and Jicama
This weekend I wanted to see if I could make mashed keto potatoes acceptable for Thanksgiving. Mashed potatoes on Thanksgiving has always been my thing. I would like to find something to replace them that is also familiar.
I bought a baba route and a jicama. I split each one in half and made french fries and mashed potatoes with each half.
Here are the results:
French fries with jicama: I tried to boil the fries for a while and then baked them for 40 minutes or so. They are going crazy! Terrible. Do not bother on this front. All websites about "Jicama fries" are crap. They were still crispy after all that time and the taste wasn't even close.
Mashed potatoes with jicama: I diced the jicama and boiled it for more than 30 minutes. The pieces did not soften at all. I threw them into a food processor with butter, salt, pepper, cream and sour cream. It made a thick and liquid crunchy mess and didn't taste good at all. He went straight to the trash with the french fries.

Rutabaga potato chips: Cut similarly to potatoes, they also look alike. Stir in pepper salt oil and bake for 30-40 minutes. They were … acceptable. Normal baked fries are not my "thing" either, so I'm a bit skewed. I could see how to make them and cover them with bacon, cheese and ranch if I ever have the craving. Maybe an air fryer could do a better job. I can also try to fry them at some point. There was some potential for sure success.

Mashed potatoes Rutabaga: the same treatment: diced and boiled for more than 30 minutes. I threw them into the food processor with butter, thick cream, sour cream, salt, pepper and chopped garlic.
They beat and looked like mashed potatoes. The texture was perfect. The taste … was BETTER than mashed potatoes! Rutaga adds this soft radish as a spice that is excellent. I had my wife and father-in-law taste them; both agreed that they were superior to normal mashed potatoes. These were so good that I didn't even consider trying a mashed cauliflower test.

I strongly recommend that people prepare kohlrabi mashed potatoes this year for Thanksgiving.
